It has been my experience that the 1st weekend of workshops have the most classes to pick from, and it is a full day of workshops with a lunch break in the middle.
The 2nd Weekend typically have fewer classes to choose from and have not been for the full day (on both days).
This means if you go during the 1st weekend you can take almost all your required workshops on one day, and probably have an interesting group of "electives" to choose from if you have to go back on a 2nd day.
If you choose to go second weekend, there are fewer classes offered, and may only be a half days worth. You end up having to go both days and are scrambling to get the required classes and have bare pickings for the "elective" classes you must choose. That means you might sit though an "elective" class that you are not even remotely interestested in so you can fill your requirements.
Now all that said, this may not apply this year/faire. It has just been my experience from years past.
I have always taken a couple days worth of workshos, more even than what may be "required" as they are usually pretty interesting and you get to meet people that you may not have otherwise come into contact with.
